CMC is widely used in the food industry because of its thickening and emulsification stabilization, water retention, gelation, good film-forming properties, odorless, tasteless and physiological inertness, such as thickeners, emulsion stabilization agent, adhesive stabilizer and moisture adhesive, etc. In emulsified foods or thickened juices, CMC is often used as a highly viscous material, which can improve the electrostatic repulsion of casein particles and reduce the degree of milk precipitation or phase separation.
